“ImpacTaste” will seek to take advantage of the main brewery by-product
Hijos de Rivera (Estrella Galicia) and Blendhub have teamed up to launch the ImpacTaste platform to innovate in the food industry and seek new ways to make the most of bagasse, the main by-product of the brewing industry and with a high nutritional value.
Specifically, bagasse is a by-product resulting from the pressing and filtering process of the brewing wort. Due to its high protein content, the companies of the Hijos de Rivera group, such as Estrella Galicia or 1906 Reserva Especial, revalue 100% of bagasse production by processing it for animal feed.
However, the high value of bagasse components, such as its high protein, lipid or cellulose content, has led the company to explore, together with Blendhub in its R&D&I strategy, new ways of valorization in the form of healthy and sustainable food. It is estimated that the European brewing industry produces more than seven million tons of bagasse per year.
